The cherries come mostly from our young trees, which give fruit and freshness, and a few from our oldest trees, which adds structure and intensity. The cherries are fermented on skins and stones for 4-5 days to add more complexity and taste. Then the cherries are pressed and fermented in steel tanks, to preserves the fruit flavors. To maintain maximum fruit, the wine is bottled directly from the steel tanks. When the bottle is open, the wine can easily last for 1-2 weeks, if kept in a cool place.
Frederiksdal vintage wine was produced in 2008 (very few bottles), 2009, 2011, 2012, 2013, 2015, 2016 and now in 2018. It has since the beginning been a ‘darling’ among the reviewers.
